Mexican Rice Recipe by Chef Nancy


  • 1 cup rice, uncooked
  • 1/4 teaspoon salt
  • 3 cloves garlic, diced
  • 1 can black beans, rinsed and drained
  • 1 15oz jar of salsa, medium or hot (your favorite)
  • 3 green onions, diced
  • 1 Jalapeño, minced (optional)


  • Cook rice according to package directions, adding the salt and diced garlic to water,
  • When rice is done, add rinsed and drained black beans, salsa and diced green onions, mix
  • Add jalapeno if you want it hotter, mix
  • Serve
